  1. Preparation - 10 min
  2. 1. Parboil the potatoes for 5-6 min in a pot of boiling water and drain. They should be hard, yet a little tender.
  3. 2. Heat the oil in a large nonstick skillet over high heat. Add in the bay leaf and mustard seeds and saute/fry till the seeds begin to pop. Add in the onion and lower the heat to medium-high.
  4. 3. Add in the potatoes and saute/fry, turning constantly, till the potatoes begin to turn crispy. Add in the paprika and saute/fry for a few more min.
  5. 4. Add in the seasonings and toss to coat the potatoes. Cook for a few more min. Remove the bay leaf and serve.
