Directions

  1. Heat 1 Tbsp. butter in heavy medium saucepan over medium-high heat. Add in shallots and saute/fry till beginning to brown, about 5 min. Add in peppercorns and mash with back of fork. Add in broth, Cognac, and cream and boil till sauce is thick sufficient to coat spoon, whisking occasionally, about 15 min. Set sauce aside.
  2. Heat remaining 1 Tbsp. butter with extra virgin olive oil in heavy large skillet over medium-high heat. Sprinkle steak with salt and pepper. Add in steak to skillet and saute/fry till brown and cooked to desired doneness, about 4 min per side for medium-rare. Transfer steak to cutting board. Add in reserved sauce to same skillet and bring to boil, stirring to scrape up browned bits.
  3. Slice steak thinly. Transfer steak to platter. Serve with sauce.
