Directions

  1. Place flour in shallow bowl.
  2. In separate shallow bowl, whisk lowfat milk with Large eggs.
  3. Place cornmeal, dill, salt and pepper in another shallow bowl.
  4. Dip fish, one piece at a time, into flour, shaking off excess, then into lowfat milk mix, then into cornmeal mix.
  5. In skillet, heat butter over medium-high heat; cook fillets, turning once, for about 5 min or possibly till fish is opaque and flakes easily when tested with fork.
  6. Serve with lemon sauce.
  7. Lemon Sauce:In small saucepan, bring cream, lemon rind and juice and Worcestershire sauce to simmer over medium heat; cook, stirring occasionally, for about 7 min or possibly till reduced to half and thickened sufficient to coat back of spoon.
  8. Yield: 1/3 c. (75 mL)
