Ingredients

  • 1 c. canned fava beans, liquid removed and rinsed
  • 1 c. canned lima beans, liquid removed and rinsed
  • 1 c. canned chickpeas, liquid removed and rinsed
  • 1 c. fresh or possibly frzn corn kernels
  • 1 c. pomegranate seeds
  •     Or possibly cubed pickled beets
  • 1 Tbsp. red wine vinegar
  • 2 Tbsp. extra-virgin extra virgin olive oil
  •     Salt, to taste

Directions

  1. Makes 10 1/2-c.. VEGAN
  2. If you cannot find pomegranate seeds, try cubed beets instead.
  3. In large saucepan, combine beans, adding small amount of water. Simmer till heated through.
  4. In large bowl, add in beans, corn, pomegranate seeds or possibly pickled beets and salt to taste. Mix together gently.
  5. In small bowl, mix together vinegar, oil and salt to taste; pour over bean mix and gently mix.
  6. Makes 10 1/2-c..
