%20and%20festive.%20Paella%20fits%20the%20bill%20perfectly%20for%20this%20criteria.%20I%20usually%20make%20my%20stand-by%20paella%20but%20I%20wanted%20to%20try%20something%20different%20this%20time.%20I%20used%20the%20basic%20paella%20recipe%20that%20I%20always%20use%20and%20added%20different%20ingredients.%3C/p%3E%3Cp%3EI%20am%20getting%20ahead%20of%20myself%20though...%3C/p%3E%3Cp%3EWe%20started%20off%20with%20Strawberry-Mint%20Sangria.%20It%20was%20really%20good.%3C/p%3E%3Cp%3EFor%20appetizers%20I%20bought%20some%20Spanish%20Cheeses%20(uh%20oh,%20I%20forgot%20what%20they%20were%20called...bad%20blogger!).%20We%20also%20had%20olives%20and%20an%20artichoke%20dip%20and%20the%20dip%20I%20posted%20yesterday.%3C/p%3E%3Cp%3EI%20browned%20up%20some%20chicken%20drumettes%20and%20some%20country%20style%20ribs%20that%20the%20butcher%20cut%20into%202%20inch%20pieces.%3C/p%3E%3Cp%3EAdded%20the%20other%20stuff%20and%20continued%20drinking%20and%20talking.%3C/p%3E%3Cp%3EAnd%20it%20all%20came%20together!%20I%20used%20scallops,%20mussels,%20gulf%20shrimp,%20spanish%20chorizo,%20chicken%20and%20green%20beans.%20How%20could%20it%20be%20bad?%3C/p%3E%3Cp%3EPaella%3C/p%3E%3Cp%3EAdapted%20from%20Recipe%20from%20the%20Spanish%20Table%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20Heat%20stock%20in%20a%20separate%20stock%20pot.%20Crush%20saffron%20and%20add%20it%20to%20the%20stock%20or%20a%20little%20bit%20of%20white%20wine.%20Heat%20paella%20pan%20over%20medium%20heat,%20add%20olive%20oil%20and%20fry%20chicken%20until%20it%20begins%20to%20brown.%20Next%20add%20garlic%20and%20onions%20and%20saute%20until%20translucent.%20Add%20chorizo%20and%20cook%20until%20heated.%20Add%20the%20rice,%20stirring%20until%20well%20coated%20with%20oil.%20Add%20the%20paprika%20and%20grated%20tomato.%20Stir%20while%20cooking%20for%20a%20few%20minutes.%3C/p%3E%3Cp%3E2.%20Add%20saffron%20flavored%20wine%20and%20hot%20stock.%20Bring%20to%20a%20boil%20while%20scraping%20the%20bottom%20of%20the%20pan.%20Now%20the%20rice%20should%20be%20level%20and%20you%20will%20not%20need%20to%20stir%20from%20this%20point%20on.%20Adjust%20heat%20to%20maintain%20a%20nice%20simmer.%20When%20the%20rice%20has%20absorbed%20a%20good%20amount%20of%20liquid%20but%20still%20has%20a%20soupy%20appearance%20add%20the%20mussels%20or%20clams.%20Once%20the%20rice%20is%20cooked%20add%20the%20shrimp%20or%20prawns%20tucking%20them%20down%20into%20the%20rice,%20then%20the%20piquillo%20peppers,%20artichoke%20hearts,%20green%20beans,%20beans%20and%20peas.%20During%20this%20time%20the%20rice%20should%20be%20carmelizing%20on%20the%20bottom%20of%20the%20pan%20or%20creating%20what%20is%20called%20the%20socarrat.%20It%20will%20make%20a%20faint%20crackling%20sound%20and%20smell%20toasty%20sweet%20but%20not%20burnt.%20Set%20aside%20to%20%22rest%22%20for%205-10%20minutes.%20Sprinkle%20with%20chopped%20parsley,%20garnish%20with%20lemon%20wedges%20and%20serve.%3C/p%3E%3Cp%3E3.%20OVEN:%20You%20can%20also%20use%20an%20oven%20if%20you%20find%20that%20your%20pan%20is%20too%20large%20to%20cook%20on%20the%20stove%20top,%20even%20with%20occasionally%20moving%20the%20pan%20around%20on%20the%20burner(s).%20Begin%20your%20recipe%20on%20the%20stove%20top%20but%20after%20adding%20the%20liquid%20carefully%20move%20your%20paella%20pan%20into%20the%20oven%20(350-400%20degrees).%20Once%20rice%20is%20done%20return%20it%20to%20the%20stove%20top%20to%20create%20the%20caramelized%20layer%20of%20rice%20on%20the%20bottom%20of%20the%20pan.%3C/p%3E%3Cp%3EStrawberry%20Mint%20Sangria%3C/p%3E%3Cp%3ESangria:%20Fun%20and%20Festive%20Recipes%20by%20Mittie%20Hellmich%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3E2%20cups%20strawberries%20(hulled%20and%20sliced)%3C/p%3E%3Cp%3E1/2%20cup%20fresh%20mint%20leaves%20(about%2020%20leaves)%20plus%20extra%20sprigs%20for%20garnish%3C/p%3E%3Cp%3E1%201/2%20ounces%20brandy%3C/p%3E%3Cp%3E1%20bottle%20dry%20white%20wine,%20chilled%3C/p%3E%3Cp%3E12%20ounces%20club%20soda,%20chilled%3C/p%3E%3Cp%3ETo%20Make:%20In%20a%20large%20glass%20pitcher,%20combine%20the%20strawberries,%20mint%20leaves,%20and%20brandy.%20Slowly%20pour%20in%20the%20wine,%20then%20refrigerate%20for%20two%20hours.%20When%20ready%20to%20serve,%20add%20the%20club%20soda%20and%20stir%20gently%20with%20a%20long%20wooden%20spoon.%20Pour%20into%20ice-filled%20glasses%20and%20garnish%20each%20glass%20with%20a%20mint%20sprig.%3C/p%3E%3Cp%3EBoy%20oh%20boy%20do%20I%20miss%20the%20Spanish%20Table%20in%20Berkeley.%20As%20a%20matter%20of%20fact,%20I%20am%20missing%20California%20and%20its%20%22No%20Humidity%22%20policy.%3C/p%3E){kind=link}
