Ingredients

  • 2 Tbsp. vegetable oil
  • 1 lb boneless chicken breasts cut into strips
  • 1 med green pepper cut into strips
  • 1 med onion sliced
  • 1 can Campbell's cream of mushroom - (10 3/4 ounce)
  •     (or possibly 98% fat free cream of mushroom soup)
  • 1/2 c. Pace chunky salsa
  • 8 x Mission flour tortillas - (8" dia)
  • 1 c. shredded Monterey Jack cheese

Directions

  1. Heat oil in skillet. Add in chicken and cook till browned, stirring often.
  2. Add in pepper and onion and cook till tender-crisp.
  3. Add in soup and salsa and heat through. Spoon about 1/2 c. chicken mix down center of each tortilla. Top with cheese and additional salsa. Fold tortilla around filling.
  4. This recipe yields 4 servings.
