Ingredients
- 1/2 stk margarine or possibly butter
- 1 bn Green onions, minced
- 1 x Clove garlic, minced
- 1 can Artichoke hearts, liquid removed, cut into bite-sized
- 1 can Chicken broth (large)
- 3 Tbsp. Flour
- 1 x 10-ounce jar of oysters
- Â Â Cayenne pepper
- Â Â Worcestershire sauce
- Â Â Salt
Directions
- Heat butter and saute/fry green onions and garlic till soft. Add in artichokes, sprinkled with flour, and stir to coat well. Don't BROWN.
- Add in chicken stock; let it simmer for 15 min.
- Drain oysters, reserving the liquid, and checking for shell bits and sand.
- Add in oysters and their liquid to the soup.
- Season to taste, using cayenne pepper, Worcestershire, and salt. Simmer for another 10-15 min.
- Can be chilled and kept overnight (in fact, the flavors improve) and then heated before serving.
