Outstanding Smoked Goose Breasts

This is a very easy way to prepare wild Goose. Total prep time is about 15 min with 5-7 hours of smoking. I started doing this about 4 years ago and it now the only way I do my geese. Once people know that I have a batch it doesn't last long.

Ingredients

  • Skinned and boneless goose breasts (amount depends on size of smoker)
  • Sea Salt
  • Fresh Ground Pepper
  • Cumin
  • Coriander
  • Mrs Dash Yellow label
  • Cayenne Pepper to taste

Directions

  1. Rinse goose breasts and pat dry
  2. place on a large cookie sheet skinned side up
  3. add a sprinkle of salt to taste on all breasts
  4. pepper
  5. cumin
  6. coriander
  7. Mrs dash
  8. and Cayenne
  9. This a dry rub so try to get an even coat of the ingredients on each breast
  10. Place in smoker (I use a Bradley)
  11. I use the Special Blend wood but have also used Hickory
  12. Smoke on low temp for the first 1.5 hours with smoke and then gradually raise the temp
  13. Cooking can take up to 7 hours for a large batch (20 breasts)
  14. They should be done to med rare.
  15. Once they are done store them in the fridge overnight in an unsealed bag
  16. Once this is done you can vacuum seal them and freeze
  17. To serve cut very thin pieces and serve with cheese and crackers
  18. Be prepared to have extra ready once people try them they go fast
