  1. Crust: Combine graham cracker crumbs and margarine. Press onto bottom of 9" springform pan. Bake at 325 F for 10 min.
  2. filling: Combine cream cheese, sugar, lemon juice, lemon peel, and vanilla, mixing at medium speed of electric mixer till well blended. Add in egg yolks, one at a time, mixing well after each addition.
  3. Beat egg whites till stiff peaks form. Fold into cream cheese mix.
  4. Pour over crust.
  5. Bake at 300 F for 45 min. Loosen cake from rim of pan; cold before removing rim of pan. Chill.
  6. Serving Ideas: Garnish with fresh fruit or possibly cherry pie filling.
