Ingredients

  • 3 c. poached chicken in bite-size pcs
  • 1 Tbsp. soy sauce
  • 2 tsp fresh lemon juice
  • 1 1/4 c. diced celery
  • 1/3 c. sliced green onions
  • 1 can bean sprouts - (16 ounce) liquid removed
  • 1 can water chestnuts - (5 ounce) sliced thin
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 3/4 c. Hellmann's mayonnaise (Best Foods west of the Rockies)
  • 1/3 c. toasted almonds minced
  • 1 can chow mien noodles - (6 ounce)

Directions

  1. Sprinkle chicken with soy sauce and lemon juice. Cover and refrigeratefor at least 2 hrs.
  2. Add in remaining ingredients, except almonds and noodles. Spoon into buttered 1 1/2 qt casserole and sprinkle with almonds.
  3. Bake in 350 degree oven for 30 to 35 min. Serve on crisp chow mien noodles.
