Orient Express Salad Recipe

Ingredients

  • 1 x 12 oz package fresh thin chinese egg noodles (found in refrigerated section of grocery stores)
  • 6 x scallions thinly sliced
  • 1 x cucumber peeled sliced lengthwise seeded and diced
  • 1/2 c. fresh coriander leaves coarsely capped
  • 1/2 c. dry roasted peanuts coarsely minced
  • 2 Tbsp. rice
  • 1 Tbsp. asian sesame oil
  • 1 Tbsp. soy sauce
  • 1 clv garlic chopped
  • 2 Tbsp. fresh lemon juice
  • 1 tsp warm pepper sauce

Directions

  1. In a large pot of salted boiling water cook noodles for 2 min.
  2. Drain to a colander and rinse under cool running water till cold to the touch.
  3. Drain again.
  4. In a large bowl combine noodles with scallions cucumber coriander and half of peanuts.
  5. In a small bowl whisk all dressing ingredients together till well combined.
  6. Toss with noodles.
  7. Sprinkle with remaining peanuts and serve.
  8. A bowl of these noodles glinting with crescents of cucumber looks like a mild mannered dish at first glance. Move closer however and the toasty aroma of sesame oil and the assertive tang of fresh ginger begin to reveal the true racy nature of this Asian inspired salad.
