Orecchiette with Broccoli Rabe and Spicey Sausage

This is a really easy and yummy pasta recipe that even my kids liked. It is going to be a regular item on our monthly menu!!!

Ingredients

  • 3 Tablespoons of salt
  • 3 bunches of broccoli rabe, about 1 1/2 lbs., coarsely chopped
  • 16 oz. orecchiette pasta, or other small pasta like penne
  • 1 pkg. Jenny-O Spicy Italian Sausage (5 sausages)
  • 2 Tablespoons olive oil
  • 1 Cup chicken stock
  • 1 1/2 ounces finely grated romano or parmesan cheese
  • 1/2 lemon

Directions

  1. Bring a large pot of water to boil with the salt. Add the broccoli and cook for 6-8 minutes until soft. Remove with a slotted spoon and set aside.
  2. Bring the same pot of water to a boil, add the orecchiette and cook for 10 minutes, or until slightly undercooked. Drain and save some of the water.
  3. Heat the olive oil in a skillet and add the sausage meat, breaking it into small pieces. Cook until broken up into small pieces and cooked fully, then add the broccoli and continue cooking until the broccoli breaks down into a saucelike texture.
  4. Then add the sausage/broccoli mixture into the cooked pasta, add the chicken stock and mix. Use the reserved water if the pasta needs more moisture. Serve and top with parmesan cheese and a few drops of lemon juice.
