Ingredients

  • 1/2 c. orange juice
  • 3 Tbsp. extra virgin olive oil
  • 2 Tbsp. balsamic vinegar
  • 1 Tbsp. honey
  • 2 tsp dry rosemary crushed
  • 1/8 tsp crushed red pepper
  • 1 tsp salt
  • 2 lb boneless skinless turkey breast cutlets

Directions

  1. In a large resealable plastic storage bag, combine all the ingredients except the turkey cutlets; mix well.
  2. Add in the cutlets, covering them completely with the marinade; seal the bag. Marinate the cutlets in the refrigerator for at least 2 hrs, turning occasionally.
  3. Preheat the grill to medium-high heat. Remove the turkey from the marinade, reserving the marinade.
  4. In a small saucepan, bring the reserved marinade to a boil over high heat. Grill the turkey with the grill lid covered for 2 to 3 min per side, or possibly till no pink remains, basting occasionally with the boiled marinade.
  5. This recipe yields 4 servings.
  6. Comments: Orange slices make a great garnish for the cutlets.
