Orange Glazed Chicken

Ingredients

  • 2 tsp butter
  • 1/2 c. walnut pcs
  • 2 tsp butter
  • 500 gm boneless chicken breast, skinned and cut into 2 cm thick slices
  • 1 sm onion, sliced
  • 1 pkt MAGGI Orange and Rosemary Gravy Mix
  • 1/2 c. dry white wine
  • 1/2 c. water, approximately
  • 3 Tbsp. orange marmalade
  • 1 x oranges, peel and pith (1 to 2) removed, and cut into segments

Directions

  1. Heat the first measure of butter in a frying pan.
  2. Add in the walnuts and cook over a moderate heat till golden.
  3. Remove the walnuts and set aside. Wipe out the pan.
  4. Heat the second measure of butter in the pan. Add in the chicken and brown over a moderately high heat.
  5. Remove the chicken and set aside.
  6. Add in the onion to the pan and cook for 2-3 min.
  7. Combine the gravy mix, wine and the 1/2 c. water. Add in to the pan.
  8. Bring to the boil, stirring constantly, then simmer for 1 minute.
  9. Stir in the marmalade and simmer for a further 1-2 min.
  10. Return the chicken to the pan with any meat juices and the walnuts.
  11. Cover the pan and simmer over a low heat for 4-5 min or possibly till the chicken is cooked. Stir occasionally.
  12. If necessary, add in a little extra water if the sauce becomes too thick.
  13. Stir in the orange segments and serve immediately.
