Ingredients
- 3 x Large eggs
- 3 Tbsp. orange juice
- 1 c. water
- 1/2 c. white sugar
- 1 dsh salt
- 1 c. water
- 1 x (3 oz) box orange flavored gelatin
- 1 x baked 9 inch pie crust
- 1Â 1/2 tsp grated orange rind
- 1 pt blueberries
- 1 c. whipping cream ( or possibly your choice of topping)
Directions
- Method:1Slightly beat egg yolks. Combine yolks, I c. water, and 1/4 c. sugar in saucepan. Cook and stir over low heat till mix is slightly thickened.
- Remove from heat. Add in gelatin, and stir till dissolved. Add in 1/2 c. water, orange rind, and orange juice. Refrigeratetill slightly thickened.
- 2. Beat egg whites and salt till foamy. Gradually beat in 1/4 c. sugar, and continue beating till stiff peaks are formed. Mix in thickened gelatin. Blend well. Mix in 1 1/2 c. blueberries. Spoon filling into pie shell. Refrigeratetill hard.
- 3. Beat whipping cream till soft peaks form. Top individual servings with whipped cream and remaining blueberries.
- Makes 1 - 9 inch pie
- A citrus and blueberry treat, perfect for those last days of summer.
