- 1 5-7-pound spiral-cut ham (fully cooked; discard the glaze packet.)
- 1/2 cup dark brown sugar
- 1/2 teaspoon ground cloves
- 2 tablespoons orange juice
- grated zest of 1 small or medium orange
- 1 tablespoon mild ground mustard-prepared">mustard or Creole mustard-prepared">mustard
- 1 tablespoon apple cider vinegar (Bragg’s is the best!)
- 1 tablespoon bacon drippings or bacon olive oil
- HAM DIPPING STUFF:
- 1/2 cup mayonnaise (light mayo is fine)
- 1/4 cup mild ground mustard-prepared">mustard or Creole mustard-prepared">mustard
- 1-2 teaspoons apple cider vinegar

.%20Plus,%20I%20think%20I%E2%80%99ve%20developed%20a%20mild%20turkey%20allergy%20as%20I%E2%80%99ve%20gotten%20older%20(my%20brother%20was%20severely%20allergic%20until%E2%80%A6well%E2%80%A6it%E2%80%99s%20a%20long%20and%20complicated%20and%20way-too-medical-for-a-food-blog%20story)%20and%20I%20always%20feel%20icky%20afterwards.%3C/p%3E%3Cp%3EDue%20to%20my%20brother%E2%80%99s%20aforementioned%20poultry%20allergy,%20we%20always%20had%20turkey%20and%20ham%20at%20Thanksgiving%20and%20Christmas.%20So%20for%20me,%20having%20a%20ham%20isn%E2%80%99t%20such%20a%20big%20deal,%20but%20my%20husband%20thinks%20I%E2%80%99m%20an%20abomination.%3C/p%3E%3Cp%3EFor%20Thanksgiving%20this%20year,%20it%20was%20just%20our%20little%20family,%20so%20we%20had%20this%20orange%20and%20brown%20sugar-glazed%20ham%20instead%20of%20of%20turkey.%20And%20since%20lots%20and%20lots%20of%20people%20do%20ham%20for%20Christmas,%20I%20wanted%20to%20share%20it%20now%20because%20it%20is%20a.maz.ing.%20You%20know%20that%20glaze%20packet%20that%20comes%20with%20your%20ham?%20Just%20toss%20it.%20It%20will%20never%20compare.%20Your%20ham-eating%20experiences%20will%20never%20be%20the%20same.%3C/p%3E%3Cp%3EThe%20ham%20part%20is%20super%20easy.%20Actually,%20the%20whole%20thing%20is%20easy,%20which%20appeals%20to%20me%20in%20so%20many%20ways.%20Preheat%20oven%20to%20325.%20Line%20a%20heavy-duty%20roasting%20pan%20(if%20you%20don%E2%80%99t%20have%20one,%20this%20is%20the%20one%20we%E2%80%99ve%20consistently%20recommended.%20It%20is%20clearly%20not%20the%20one%20I%20have,%20but%20it%20is%20the%20one%20I%20wish%20I%20had.)%20with%20aluminum%20foil%3C/p%3E%3Cp%3Eand%20place%20the%20rack%20inside%20of%20the%20foil.%3C/p%3E%3Cp%3EPlace%20the%20ham,%20fatty%20side%20up,%20on%20the%20rack%20(but%20also%20make%20sure%20the%20slices%20are%20vertical%20and%20the%20flat%20end%20isn%E2%80%99t%20face-down%E2%80%93you%20want%20that%20fat%20to%20melt%20and%20run%20between%20the%20slices%20to%20keep%20things%20moist.%20Sorry.%20I%20had%20to%20use%20the%20m-word.)%3C/p%3E%3Cp%3EInsert%20a%20roasting%20thermometer%20into%20the%20thickest%20part%20of%20the%20ham%20that%20has%20not%20been%20sliced.%3C/p%3E%3Cp%3EPlace%20the%20ham%20in%20the%20heated%20oven%20and%20roast%20for%201%201/2-2%20hours%20or%20until%20the%20thermometer%20reaches%20140-145.%3C/p%3E%3Cp%3EWhile%20the%20ham%20is%20roasting,%20combine%20the%20brown%20sugar,%20cloves,%20juice,%20zest,%20mustard,%20and%20vinegar.%20I%20also%20add%20some%20of%20our%20bacon%20olive%20oil,%20which%20really%20kind%20of%20takes%20it%20over%20the%20top%20of%20Amazingness%20Mountain,%20but%20you%20could%20always%20use%20regular%20bacon%20drippings%20if%20you%20have%20some%20lying%20around.%3C/p%3E%3Cp%3EWhisk%20it%20all%20together.%20When%20the%20ham%20has%20about%2030%20minutes%20to%20go,%20remove%20the%20ham%20and%20brush%20the%20glaze%20on%20the%20outside%20of%20the%20ham,%20all%20the%20way%20down%20into%20the%20slices.%20Place%20the%20ham%20back%20in%20the%20oven%20and%20cook%20until%20done.%3C/p%3E%3Cp%3EWhile%20the%20ham%20is%20finishing%20off,%20whisk%20together%20the%20BEST%20part%20of%20ham%20at%20my%20house%20growing%20up.%20It%E2%80%99s%20a%20simple%20sauce%20made%20from%20mayonnaise,%20mustard,%20and%20a%20little%20apple%20cider%20vinegar,%20but%20it%20was%20seriously%20my%20favorite%20part%20of%20ham%20as%20a%20kid%E2%80%93we%20couldn%E2%80%99t%20have%20ham%20without%20it.%20You%20can%20use%20regular%20yellow%20mustard,%20but%20I%20love%20the%20deeper%20flavor%20of%20the%20ground%20mustard.%3C/p%3E%3Cp%3EWhen%20done,%20remove%20from%20the%20oven%20and%20serve%20with%20ham%20dipping%20stuff%20(yep,%20that%E2%80%99s%20what%20it%E2%80%99s%20called.%20My%20favorite%20part%20of%20ham%20dinners%20as%20a%20kid.)%3C/p%3E%3Cp%3EAnd%20there%20you%20have%20it%E2%80%93the%20BEST%20ham%20and%20the%20EASIEST%20holiday%20dinner%20in%20all%20the%20land.%20Promise.%20This%20will%20make%20a%20lot%E2%80%936%20pounds%20will%20serve%20in%20the%2020%20people%20range.%20You%20can%20also%20freeze%20the%20leftovers%20for%203-4%20months.%3C/p%3E%3Cp%3EIf%20you%E2%80%99re%20looking%20for%20side%20dishes,%20I%20went%20old-school%20OBB%20and%20served%20them%20with%20these%20Stuffed%20Blue%20Cheese%20Potatoes%20(although%20Funeral%20Potatoes%20are%20always%20an%20excellent%20choice),%20Bacon-Wrapped%20Green%20Beans,%20and%20this%20Sweet%20Cornbread.%3C/p%3E%3Cp%3EOrange%20and%20Brown%20Sugar-Glazed%20Spiral-Cut%20Ham%3C/p%3E%3Cp%3ERecipe%20heavily%20adapted%20from%20Betty%20Crocker%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EInstructions:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20325.%20Line%20a%20roasting%20pan%20with%20aluminum%20foil%20and%20place%20the%20rack%20inside%20of%20the%20foil.%20Place%20the%20ham,%20fatty%20side%20up,%20on%20the%20rack.%20Insert%20a%20roasting%20thermometer%20into%20the%20thickest%20part%20of%20the%20ham%20that%20has%20not%20been%20sliced.%20Place%20the%20ham%20in%20the%20heated%20oven%20and%20roast%20for%201%201/2-2%20hours
