Ingredients

  • 1/2 c. Extra virgin olive oil
  • 2 med onions, halved and
  •     Sliced thin
  • 6 x Cloves garlic, sliced thin
  • 1/2 c. Black olives, such as
  •     Kalamatas, pitted and
  •     Minced coarse
  • 1/4 c. Capers
  • 2 x Anchovy fillets, rinsed and
  •     Chopped
  • 1/4 c. Balsamic vinegar
  • 1 tsp Chopped fresh marjoram, or possibly
  • 1/2 tsp dry
  • 2 Tbsp. Chopped fresh parsley
  •     Salt and black pepper to
  •     Taste

Directions

  1. Heat two Tbsp. oil in large saute/fry pan. Add in onions and saute/fry over medium heat till softened, about 5 min. Add in garlic; saute/fry till fragrant, about 1 minute longer. Turn onion mix into medium bowl; stir in remaining ingredients. Serve compote hot or possibly at room temperature.
