Ingredients
- 1 1/2 lbs lean ground beef
- 3 tbs finely chopped onion
- 3 cloves garlic, finely minced
- 1 tbs worcestershire sauce -OR- soy sauce
- 2 eggs
- 2 cups soft breadcrumbs
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 tbs water
- 1 tbs oil
- Sauce:
- 1 cup sliced mushrooms
- 2 tbs butter
- 1 branch (about 4-inches) fresh rosemary -OR- 1/2 tsp dry
- 1 cup merlot or semi-dry red wine
- 1/3 cup heavy cream

?%20%20Make%20salisbury%20steak%20of%20course!%3C/p%3E%3Cp%3EI%20call%20myself%20the%20queen%20of%20the%20one-dish%20meal.%20%20I%20like%20one-dish%20meals....no%20wait,%20I%20LOVE%20one-dish%20meals!%20%20There's%20many%20reasons%20for%20this.%20%20First,%20I%20like%20e-a-s-y,%20but%20it%20has%20to%20be%20tasty%20too.%20Secondly,%20it's%20less%20dishes%20to%20wash--and%20in%20humid%20weather,%20less%20time%20over%20a%20steamy%20sink%20is%20always%20good.%20%20Thirdly,%20it%20cooks%20in%20so%20little%20time,%20and%20covered,%20so%20it%20doesn't%20heat%20the%20kitchen,%20or%20at%20least%20not%20much.%3C/p%3E%3Cp%3ESauce%20makes%20it%20specialI%20make%20a%20variation%20of%20this%20sauce%20for%20plain%20burgers%20and%20steaks%20and%20the%20variation%20is%20used%20for%20my%20Bacon%20Blue%20Cheese%20Burger%20recipe.%3C/p%3E%3Cp%3EThe%20variation%20is%20I%20tried%20introducing%20the%20taste%20of%20browned%20butter%20because%20it%20goes%20so%20well%20with%20mushrooms,%20and%20a%20whisper%20of%20rosemary%20because%20I%20have%20literally%20tons%20of%20it%20growing%20this%20season.%3C/p%3E%3Cp%3EThose%202%20flavors%20went%20so%20well%20with%20these%20salisbury%20steaks!%20Mind%20you,%20the%20rosemary%20is%20not%20overpowering--it's%20one%20herb%20I%20am%20not%20overly%20fond%20of,%20truth%20be%20told,%20in%20excess%20so%20I%20keep%20it%20light.%20%20Add%20more,%20or%20leave%20it%20out%20depending%20on%20your%20taste.%20%20You%20could%20elect%20to%20make%20the%20sauce%20in%20the%20blue%20cheese%20burger%20post%20instead%20of%20this%20one.%20%20It%20will%20taste%20fine%20too!%20%20That%20one%20has%20onions%20for%20added%20flavor,%20so%20mushroom%20haters%20can%20leave%20out%20the%20mushrooms!%3C/p%3E%3Cp%3EThe%20amount%20of%20breadcrumbs%20may%20sound%20excessive,%20but%20it%20works%20in%20this.%20%20Using%20soft%20breadcrumbs%20in%20the%20stated%20amount%20makes%20for%20a%20very%20tender%20and%20light%20meat%20patty%20that%20won't%20fall%20apart!%3C/p%3E%3Cp%3ESalisbury%20Steak%20with%20Browned%20Butter%20Merlot%20Sauce%3C/p%3E%3Cp%3EMeat%20Patties:%3C/p%3E%3Cp%3EMix%20all%20meat%20patty%20ingredients,%20except%20the%20oil%20&%20water,%20in%20a%20large%20bowl.%20%20Form%20into%206%20patties.%3C/p%3E%3Cp%3EHeat%20oil%20in%20a%20large%20skillet%20over%20medium%20heat.%3C/p%3E%3Cp%3EBrown%20meat%20patties%20on%20both%20sides.%20%20Reduce%20heat,%20add%20the%201%20tbs%20water,%20cover%20and%20simmer%20for%2015-20%20minutes,%20or%20until%20meat%20is%20160%20degrees%20F%20(med-well)%20per%20a%20meat%20thermometer.%3C/p%3E%3Cp%3ERemove%20patties%20to%20a%20plate%20and%20cover%20with%20foil%20to%20keep%20warm.%20Wipe%20out%20the%20skillet%20with%20paper%20towels%20and%20heat%20over%20medium-high%20heat.%20%20Add%20butter%20and%20when%20butter%20begins%20to%20brown,%20add%20the%20mushrooms%20and%20rosemary%20sprig.%20%20Stir%20this%20constantly--you%20want%20the%20mushrooms%20to%20almost%20singe.%3C/p%3E%3Cp%3EAdd%20the%20merlot%20(or%20wine)%20and%20deglaze%20pan.%20%20Continue%20cooking%20over%20medium-high%20heat%20until%20wine%20is%20reduced%20by%2050%25.%20Remove%20rosemary.%20%20Reduce%20heat%20and%20stir%20in%20cream.%20%20Heat%20through.%3C/p%3E%3Cp%3EPour%20sauce%20over%20meat%20patties%20and%20serve%20immediately.%3C/p%3E%3Cp%3EMakes%206%20servings.%3C/p%3E%3Cp%3EOne%20Skillet%20Salisbury%20Steak%20with%20Browned%20Butter%20Merlot%20Sauce%3C/p%3E%3Cp%3ECopyright%20%C2%A9%20Judith%20Hannemann%20aka%20The%20Midnight%20Baker%202014.%20All%20Rights%20Reserved.%20No%20part%20of%20this%20website%20may%20be%20reproduced%20without%20The%20Midnight%20Baker's%20express%20consent.%3C/p%3E%3Cp%3EFollow%20The's%20board%20%E2%99%A8Hot%20Fun%20in%20the%20Summertime%20Blog%20Hop%E2%99%A8%20on%20Pinterest.%3C/p%3E){kind=link}
