One pot shrimp and asparagus pasta

Get all the ingredients ready to go, boil and salt water, cook pasta, add asparagus and shrimp to cooking pasta, drain, combine and enjoy. Easy for one or for a crowd.

Ingredients

  • 1# 16-25 unpeeled, uncooked frozen shrimp
  • 1# dry radiatore pasta
  • 1/2# asparagus, bottom trimmed, cut on the diagonal into 1" pieces
  • 1 1/2 cups cooked, drained, chopped spinach
  • Artichoke pesto
  • 1 small jar marinated artichokes with juice
  • 1/2 can drained hearts of palm, cut into 1" pieces
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons minced preserved lemons or 1 tablespoon lemon zest
  • 1 tablespoon minced garlic
  • 4 finely sliced green onions
  • 1/4 teaspoon red chili flakes
  • 1/2 cup grated Parmesan, Romano, Pecorino, or Kasseri cheese or a combination
  • Salt to taste

Directions

  1. Pulse artichokes with juice, hearts of palm without juice, olive oil, lemon juice, preserved lemons or lemon zest, garlic, sliced green onions, and pepper flakes in blender or food processor until chunkily smooth.
  2. Pulse in grated cheese and salt.
  3. Taste for seasoning.
  4. Bring lots of salted water to a boil.
  5. Add pasta and cook 10-12 minutes or until almost done.
  6. Add peeled, uncooked shrimp and asparagus pieces.
  7. Cook 3-5 minutes or until shrimp turns pink and asparagus turns a brighter green.
  8. Reserving a cup or so of pasta water, drain pasta, shrimp, and asparagus into colander.
  9. Place chopped cooked spinach and pesto into the bottom of a large bowl.
  10. Pour pasta with shrimp and asparagus into same large bowl.
  11. Toss with a few tablespoons of reserved pasta water and additional grated cheese.
