Ingredients

  • 1 1/2 c. water
  • 1/2 c. beer
  • 2 env onion gravy mix - (7/8 ounce ea)
  • 1 Tbsp. brown sugar - (packed)
  • 1/4 tsp grnd thyme
  • 2 lb deer stew meat - (to 3)
  •     (or possibly antelope, elk, or possibly moose stew meat)
  • 3 Tbsp. vegetable oil
  • 1 x bay leaf
  • 6 x carrots cut into 1" pcs
  • 6 med parsnips cut into 1" cubes
  • 1 c. frzn peas

Directions

  1. In small mixing bowl, blend water, beer, gravy mix, brown sugar, and thyme. Set aside.
  2. Remove all fat and silverskin from meat. Cut into 1-inch pcs.
  3. In Dutch oven, brown meat in oil over medium-high heat. Add in beer mix and bay leaf to Dutch oven. Reduce heat; cover. Simmer till meat is almost tender, 1 to 1 1/2 hrs, stirring occasionally.
  4. Add in carrots and parsnips; re-cover. Cook 20 min longer. Add in peas; re-cover. Cook 5 - 10 min longer. Throw away bay leaf before serving.
  5. This recipe yields 6 to 8 servings.
