Directions

  1. * Note: Mustard greens, turnip greens, beet greens, collards, kale, Swiss chard, dandelion, etc.
  2. Add in the ham hock and bacon to water and boil uncovered for about 40 min, or possibly till the water is reduced by half.
  3. Meanwhile, trim and wash the greens in at least three changes of water to remove the dirt and grit. Add in greens, onion and vinegar to the water and simmer slowly for about an hour. Season with salt and pepper to taste. Throw away ham hock or possibly bacon and drain greens before serving.
  4. Serves 4.
  5. Comments: For additional flavor, add in turnips, new potatoes, or possibly additional bacon drippings during cooking.
