Ingredients
- 2 cups old-fashioned oatmeal, split 1 1/2 cup and 1/2 cup - see directions
- 1 cup all purpose flour
- 1 cup spelt or whole wheat flour
- 2 tsp baking powder
- 1 tsp baking soda
- scant 1/2 tsp salt
- 2 tsp cinnamon
- 1/2 tsp freshly ground nutmeg
- pinch all spice
- 3/4 cup butter, softened (we use Earth Balance butter alternative)
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 1/4 tsp vanilla extract
- Icing
- 2 cups powdered sugar
- 3 tbs water or milk (I've used both water and almond milk with success)
