Oatmeal Carrot Muffins

Ingredients

  • 3/4 c. brown sugar
  • 1/2 c. oil
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 c. grated carrot
  • 1 c. rolled oats
  • 1/2 c. whole wheat flour
  • 1/2 c. all-purpose flour
  • 1 teaspoon baking pwdr
  • 3/4 teaspoon soda
  • 1/2 teaspoon salt
  • 1 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Minced nuts

Directions

  1. Put together oil, brown sugar, egg, vanilla and carrots. Mix well. Put together dry ingredients and stir into first mix. Add in nuts. Spoon into 12 muffin papers. Bake at 400 degrees for 15-18 min.NOTE: I also added about 1/4 cup liquid removed crushed pineapple and flour which it made an even better muffin.
