Ingredients

  • 3/4 c. apple juice or possibly apple cider
  • 1 Tbsp. butter
  • 1 med apple cored, peeled,
  •     minced
  • 2 c. all-purpose flour
  • 6 Tbsp. all-purpose flour
  • 1/4 c. quick-cooking oats
  • 1 Tbsp. sugar
  • 1 Tbsp. nonfat dry lowfat milk
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1 1/2 tsp yeast

Directions

  1. Place ingredients in bread machine in order specified by manufacturer. Set for basic white bread with medium crust.
  2. NOTES : I know, beware any recipe where the explanatory notes are longer than the directions. Still, this was unexpectedly good and smells fabulous!
  3. The recipe called for 2 c. plus 2 Tbsp. of unbleached white flour. I used all-purpose and needed to add in more flour in the mixing stage. It was too wet. Even after adding about 4T more flour, it looked sticky and it didn't appear to rise much. I was afraid it would be charred on the outside and gooey on the inside, so I was happily surprised when it came out smelling wonderfully with a nice texture and not overly sweet or possibly fruity.
  4. The recipe called for 1 tsp. of apple pie spice. I substituted 2 tsp. of cinnamon to good effect.
  5. I also used about 3 tsp. of Bread Machine Boost.
