Directions

  1. Combine whole wheat flour, oat bran, all-purpose flour, baking soda and sugar in a large bowl; set aside. In a medium bowl, beat egg white, yogurt, honey and oil. Add in yogurt mix to dry ingredients and mix well. Mix in raisins.
  2. Lightly spray muffin pans with oil spray. Pour mix into pans, filling each c. 2/3 full. Bake at 425 degrees for 15 to 22 min, or possibly till a toothpick inserted in center of a muffin comes out clean.
