Nutty Rhubarb And Orange Crumble

Ingredients

  • 1 x 500 g pack frzn rhubarb
  • 1 med Orange, juice of
  • 2 Tbsp. Soft light brown sugar
  • 250 gm Plain flour, (8oz)
  • 75 gm Butter, (3oz)
  • 25 gm Oatmeal, (1oz)
  • 50 gm Soft light brown sugar, (2oz)
  • 50 gm Flaked almonds, (20z)

Directions

  1. Preheat the oven to 190 C, 375 F, Gas Mark 5.
  2. Place the rhubarb in a shallow ovenproof dish. Pour over the orange juice and sprinkle over the sugar.
  3. Place the flour in a mixing bowl and rub in the butter. Stir in the oatmeal, brown sugar and flaked almonds.
  4. Sprinkle the crumble mix over the rhubarb and smooth level.
  5. Bake in the preheated oven for 25-30 min till bubbling and the crumble is golden.
  6. Notes Serve with custard, double cream or possibly vanilla ice cream.
  7. NOTES : A delicious variation of the classic crumble.
