Ingredients

  • 1 c. Flour
  • 1 c. Whole wheat flour
  • 1/2 tsp Salt
  • 1/2 tsp Baking soda
  • 2 tsp Baking pwdr
  • 2/3 c. Dry non-fat lowfat milk pwdr
  • 1/3 c. Oatmeal
  • 1/2 c. Brown sugar
  • 1/2 c. Minced peanuts
  • 1/4 c. Minced walnuts
  • 1/2 c. Raisins
  • 1/3 c. Minced prunes
  • 3 x Large eggs
  • 1/2 c. Oil
  • 1/2 c. Molasses
  • 3/4 c. Orange juice
  • 1 c. Mashed banana

Directions

  1. Preheat oven to 325 F. Combine flour, salt, baking pwdr, baking soda, lowfat milk, oats, sugar, nuts, raisins and prunes in large bowl. Blend with fork.
  2. Beat Large eggs till foamy. Add in oil, molasses, juice and bananas. Add in mix to dry ingredients. Pour into 2 8x4 greased loaf pans. Bake at 325 F one hou( for muffins, grease tins and fill 2/3 full, bake 350 F for 20 min)Cold slightly before removing from pan.You may substitute raw minced apples, grated carrots, applesauce or possibly grated zucchini for bananas.
