Nopi’s Lamb Meatballs with Warm Yogurt and Swiss Chard Recipe

Ingredients

  • 2 1/4 pounds ground lamb
  • 5 1/4 ounces fresh bread crumbs
  • 2 1/2 ounces pine nuts, toasted
  • 1 teaspoon ground cinnamon
  • 2 teaspoons ground coriander
  • 1/2 teaspoon dried mint
  • 4 teaspoons ground allspice
  • 4 cloves garlic, crushed
  • 1/4 cup olive oil
  • 1 medium onion, finely chopped
  • 1 red chile, seeded and finely diced
  • 10 1/2 ounces (about 1 bunch) Swiss chard, white stalks removed (and saved for another use) and green leaves coarsely shredded
  • 1 1/4 cups chicken stock
  • 2 1/2 tablespoons lemon juice
  • 2 1/4 cups whole milk Greek yogurt
  • 1 tablespoon cornstarch, mixed to a paste with 2 teaspoons water
  • 1 egg, lightly beaten
  • Seeds of 1 medium pomegranate (optional)
  • 3/4 ounce cilantro leaves, coarsely chopped
  • Coarse sea salt and black pepper
