Noodle (Pasta) Salad with Ginger Peanut Dressing Recipe

Ingredients

  • a fist full of spaghetti (or soba noodles)
  • water and salt (to cook the noodles)
  • few drops of oil
  • 1/2 medium sized cucumber, peeled, chopped into pieces
  • 1 small bell pepper or capsicum, chopped into pieces
  • 1/2 carrot, peeled and chopped into thin strips
  • few tbsp of chopped spring onion and fresh coriander leaves
  • For the dressing -
  • 2 tbsp peanut butter
  • 2 tsp soya sauce
  • 1 tsp sugar
  • 1 tbsp finely chopped fresh ginger
  • 2 tsp fresh lime juice
  • 1 clove garlic, minced
  • 1 tsp fresh lemon zest
  • 2 tbsp chopped cilantro
