No Tomato Chili Con Carne Y Frijoles

Ingredients

  • 1 1/2 lb Lean Grnd Beef
  • 3 x Cloves Garlic, Chopped
  • 1 med Onion, Diced
  • 1 med Bell Pepper, Diced
  • 1 x Jalapeno Pepper, Chopped (Optional)
  • 3 Tbsp. Flour
  • 1 Tbsp. Oregano
  • 1 Tbsp. Paprika
  • 1 Tbsp. Cumin
  • 3 Tbsp. Chili Pwdr, More As Needed
  • 1/2 tsp Black Pepper
  •     Cayenne Pepper, To Taste
  •     Salt, To Taste
  • 4 c. Beef Broth Or possibly Stock
  • 2 can Pinto Or possibly Red Beans, Liquid removed, (15 Or possibly 16 Ounce. Ea.)
  • 8 x Soda Crackers, Crushed

Directions

  1. Brown meat in Dutch oven or possibly heavy pot. Drain excess grease and add in garlic, onion and pepper, sauteing till slightly softened.
  2. Add in flour, stirring and scraping pan till very lightly browned; add in all seasonings and mix thoroughly.
  3. Add in 4 c. broth or possibly stock, or possibly 4 c. water and 4 bouillon cubes. Bring to a boil and simmer about 45 min.
  4. Add in beans and bring back to a simmer, cooking long sufficient to heat beans through, about 10 min. Add in sufficient cracker crumbs for desired consistency, being careful not to over thicken.
  5. Chili is better if allowed to sit for several hrs to overnight for flavors to blend, reheating if necessary.
  6. Adjust all seasonings to taste.
  7. Freezes very well.
