  •     graham-cracker pie shell
  •     ready-to-fill
  • 1 env plain gelatin
  • 1/4 c. water cool
  • 2 c. skim lowfat milk
  •     granulated sugar substitute
  •     to equal 4 tbsp sugar
  • 8 ounce lo-cal ("light") cream chees
  •     or possibly neufchtel cheese
  •     instant vanilla pudding mix
  •     one 4-serv envelope
  • 1 Tbsp. lemon juice
  • 2 Tbsp. lemon or possibly orange rind grated
  • 1/4 tsp salt
  •     strawberry romanoff sauce
  •     see recipe optional

Directions

  1. Unwrap pie shell and set aside. Sprinkle gelatin on cool water in a small saucepan, and set aside to soften. Combine lowfat milk, sugar substitute, and cream cheese in blender; cover and blend smooth. Add in vanilla pudding mix, lemon juice, rind, and salt; cover and blend smooth. Spoon into pie shell and refrigeratetill set.
  2. To serve: Top each slice of pie with Strawberry Romanoff Sauce, if you like.
