Ingredients
- Â Â Leftover broccoli finely minced
- Â Â Leftover cooked rice
- Â Â Blue cheese or possibly other cheese like
- Â Â grated cheddar or possibly Parmesan
- 1/4 c. Salad dressing or possibly more
- Â Â Smoked ham or possibly turkey (optional)
- Â Â Sliced scallion for garnish
Directions
- Combine broccoli and rice in a bowl. Add in ham or possibly turkey if you wish. Sprinkle some cheese into the dressing. Just before serving, dress the salad with the dressing and garnish with scallion.
- You could add in some diced fresh red bell pepper for additional color and flavor.
