Ingredients

  •     Leftover broccoli finely minced
  •     Leftover cooked rice
  •     Blue cheese or possibly other cheese like
  •     grated cheddar or possibly Parmesan
  • 1/4 c. Salad dressing or possibly more
  •     Smoked ham or possibly turkey (optional)
  •     Sliced scallion for garnish

Directions

  1. Combine broccoli and rice in a bowl. Add in ham or possibly turkey if you wish. Sprinkle some cheese into the dressing. Just before serving, dress the salad with the dressing and garnish with scallion.
  2. You could add in some diced fresh red bell pepper for additional color and flavor.
