Ingredients

  • 2 slc Toast
  •     Leftover cooked broccoli reheated
  • 2 Tbsp. Unsalted butter
  • 2 x Large eggs lightly beaten
  •     Salt to taste
  •     Tabasco sauce to taste

Directions

  1. Set toast in bottom of a deep bowl. Reheat broccoli in microwave or possibly in a double boiler. Heat butter in a skillet till golden brown. Scramble the Large eggs and cook them till almost scrambled but not quite cooked. Remove Large eggs from heat and continue to stir till heat of Large eggs cooks remaining ones; season to taste with salt and Tabasco sauce.
