%3C/p%3E%3Cp%3EMy%20recipes%20are%20often%20combinations%20of%20elements%20other%20recipes%20that%20I%20think%20work%20well%20together.%20This%20recipe%20is%20influenced%20by%20both%20my%20grandmothers.%20Like%20many%20of%20their%20generation%20here%20in%20Newfoundland,%20they%20used%20canned%20Carnation%20evaporated%20milk%20for%20baking%20which%20is%20normally%20reconstituted%20by%20adding%20an%20equal%20amount%20of%20water.%20Nan%20Morgan%20didn%E2%80%99t%20always%20do%20that;%20sometimes%20adding%20it%20straight%20from%20the%20tin%20into%20her%20Raisin%20Tea%20Buns,%20or%20other%20recipes%20like%20Snowballs%20.%20I%20learned%20myself%20over%20the%20years%20that%20this%20added%20richness%20and%20depth%20of%20flavour%20to%20baked%20goods%20like%20Newfoundland%20Cherry%20Cake.%20%20Nan%20Parsons%20added%20eggs%20to%20her%20bread%20recipes,%20particularly%20when%20she%20was%20making%20dough%20for%20dinner%20rolls,%20which%20I%20had%20never%20seen%20done%20on%20my%20mother%E2%80%99s%20side%20of%20the%20family.%20That%20not%20only%20added%20more%20richness%20to%20the%20rolls%20but%20I%20now%20think%20was%20meant%20to%20keep%20the%20crust%20a%20little%20softer.%20Borrowing%20from%20both%20sides%20of%20my%20family%20and%20adding%20in%20more%20than%20a%20few%20years%20of%20baking%20experience%20myself,%20this%20is%20the%20recipe%20I%20now%20use%20to%20make%20this%20traditional%20Newfoundland%20favourite.%20We%E2%80%99ll%20just%20call%20it%20a%20slice%20of%20my%20family%E2%80%99s%20baking%20history.%3C/p%3E%3Cp%3ENewfoundland%20Raisin%20Bread%3C/p%3E%3Cp%3E%C2%BD%20cup%20lukewarm%20water%201%20tsp%20sugar%201%20tsp%20dry%20yeast%205-6%20cups%20a%20lll%20purpose%20flour%202%20cups%20warm%20milk%20(I%20use%201%20can%20of%20evaporated%20milk%20and%20top%20it%20up%20with%20warm%20water)%20%E2%85%93%20cup%20sugar%201%20tsp%20fine%20salt%20%C2%BD%20cup%20melted%20butter%201%20lightly%20beaten%20large%20egg%202%20cups%20raisins%20(I've%20used%20sultanas%20here.)%3C/p%3E%3Cp%3EProof%20the%20yeast%20by%20dissolving%20the%201%20tsp%20of%20sugar%20in%20the%20%C2%BD%20cup%20warm%20water.%20Sprinkle%20in%20the%20yeast%20and%20leave%20to%20sit%20in%20a%20warm%20place%20for%2010%20minutes%20until%20it%20gets%20foamy.%20It%20is%20possible%20to%20hand%20knead%20this%20dough%20entirely%20but%20I%20now%20make%20it%20in%20my%20KitchenAid%20stand%20mixer.%20Add%204%20cups%20of%20the%20flour%20to%20the%20bowl%20of%20your%20electric%20mixer%20with%20the%20dough%20hook%20attached.%20Stir%20in%20the%20sugar%20and%20salt.%20Add%20all%20of%20the%20remaining%20ingredients%20except%20the%20raisins%20and%20turn%20the%20mixer%20on%20low%20for%20about%205%20minutes%20to%20get%20the%20dough%20started.%20Begin%20to%20add%20the%20remaining%20flour,%20%C2%BC%20cup%20at%20a%20time%20leaving%20it%20to%20knead%20into%20the%20dough%20for%20a%20few%20minutes.%20Continue%20to%20add%20flour%20only%20until%20the%20dough%20releases%20from%20the%20sides%20and%20bottom%20of%20the%20bowl,%20then%20let%20the%20dough%20knead%20for%20another%205%20minutes.%20Turn%20the%20dough%20out%20onto%20a%20lightly%20floured%20countertop%20or%20breadboard%20and%20spread%20it%20out%20flat.%20Sprinkle%20the%20rain%20ins%20over%20the%20dough%20and%20then%20fold%20it%20over%20several%20times%20before%20kneading%20by%20hand%20for%20a%20few%20minutes%20to%20incorporate%20the%20raisins%20evenly%20throughout%20the%20dough.%20Cover%20dough%20and%20leave%20to%20rest%20and%20rise%20for%20one%20hour.%20Punch%20the%20dough%20down%20and%20knead%20it%20for%20a%20few%20minutes%20by%20hand%20before%20letting%20it%20rest%20for%20another%2010%20minutes.%20Grease%202%20large%20or%203%20small%20loaf%20pans.%20Divide%20the%20dough%20into%206%20equal%20portions.%20Form%20each%20division%20into%20a%20ball.%20Place%202%20balls%20of%20dough%20in%20each%20loaf%20pan.%20Cover%20with%20a%20clean%20tea%20towel%20and%20allow%20the%20dough%20to%20rise%20until%20it%20is%20about%202%20inches%20above%20the%20rim%20of%20the%20pan,%20about%202%20hours%20depending%20on%20room%20temperature.%20(NOTE:%20At%20this%20stage,%20the%20bread%20dough%20can%20be%20cold%20proofed%20overnight%20in%20the%20fridge%20if%20you%20want%20to%20serve%20it%20freshly%20baked%20early%20the%20next%20day%20or%20just%20want%20to%20save%20time%20in%20advance.%20Just%20cover%20the%20pans%20with%20a%20clean%20tea%20towel.%20You%20can%20spray%20the%20surface%20of%20the%20dough%20with%20water%20from%20a%20spray%20bottle%20to%20prevent%20the%20surface%20of%20the%20dough%20balls%20from%20becoming%20too%20dry%20if%20you%20like%20but%20this%20is%20not%20really%20necessary%20with%20the%20humidity%20in%20most%20fridges.%20Just%20remove%20the%20pans%20from%20the%20fridge%20in%20the%20morning%20and%20allow%20them%20to%20finish%20raising%20to%20about%202%20inches%20above%20the%20pan%20rim%20as%20shown%20in%20the%20photo%20above,%20which%20could%20be%20another%201-2%20hours%20and%20bake%20as%20directed%20below.)%20Bake%20at%20350%20degrees%20F%20for%2030-40%20minutes%20depending%20on%20the%20size%20of%20the%20pans%20that%20you%20are%20using.%20(My%20largest%20pans%20took%2050%20minutes)The%20loaves%20should%20have%20a%20golden%20crust%20and%20sound%20hollow%20when%20tapped%20to%20be%20fully%20baked.%20When%20baked,%20turn%20loaves%20out%20onto%20a%20wire%20rack%20to%20cool.%20Brush%20the%20tops%20with%20melted%20butter%20if%20desired%20to%20soften%20the%20top%20crust.%20%203.4.3177%3C/p%3E){kind=link}
