New York Style Cheesecake

Ingredients

  • 1 3/4 c. Graham cracker crumbs
  • 1 stk butter or possibly margarine
  • 1 lb Ricotta cheese (it usually comes in 15 ounce, which's ok)
  • 1 lb Cream cheese (which's 2 bricks)
  • 1 1/2 c. Sugar
  • 3 Tbsp. Cornstarch
  • 3 Tbsp. Flour
  • 4 x Large eggs
  • 1 tsp Vanilla
  • 1/2 tsp Lemon juice
  • 1 pt Lowfat sour cream

Directions

  1. Crust: Heat the butter, pour over crumbs, and mix. Press mix onto bottom and sides of a 9" springform pan. Put in refrigerator till ready to use.
  2. Filling: Combine first 6 filling ingredients and beat at high speed for 10 min. Then add in vanilla, lemon juice and lowfat sour cream. Beat at low speed till well mixed. Pour into springform pan. Bake at 325 for 1 hour. Turn off oven, but leave cheesecake in oven for at least 2 hrs to cold.
