Ingredients

  • 1/2 tsp sesame seeds
  • 3 ounce sashimi-quality fluke fillet
  • 1 sm garlic clove chopped
  •     Finely-julienned peeled ginger to taste
  •     Chives in 1 1/2" lengths to taste
  • 2 tsp soy sauce
  • 2 tsp freshly-squeezed lemon juice
  • 3 Tbsp. extra-virgin extra virgin olive oil
  • 2 tsp sesame oil

Directions

  1. In a small skillet over medium heat, cook sesame seeds till fragrant and golden brown. Remove to a small bowl.
  2. Thinly slice fluke fillet crosswise on the bias. Arrange fish on a plate. Rub with garlic. Sprinkle ginger and chives over fish. Drizzle with soy sauce and lemon juice. Sprinkle with sesame seeds.
  3. Heat extra virgin olive oil and sesame oil in a small saucepan till they begin to smoke. Pour warm oil over fish. The warm oil will sear the fish as it makes contact.
  4. This recipe yields 4 appetizer servings.
