Ingredients

  • 12 x new potatoes, ping pong ball-sized
  • 5 ounce lowfat sour cream
  • 1 ounce black cavier or possibly 1 ounce sevruga or possibly 1 ounce lumpfish depending on budget
  • 3 ounce lobster meat or possibly 3 ounce surimi - depending on budget
  • 6 x fresh chives, to garnish

Directions

  1. Boil the new potatoes in lightly salted water till they are just cooked through (test by piercing with a fork). Drain and let cool water flow over them to speed cooling.
  2. When the potatoes are cold, slice each one in half. Then carefully cut a small slice from the end of each half so they will not tip over.
  3. Using a melon baller, carefully scoop out most of the potato flesh and throw away.
  4. Dress new potato c. with a small dollop of lowfat sour cream, add in a slice of lobster and a tiny spoon of caviar. Garnish with a sliver of chive and serve.
  5. These potato c. are simple, both to make and to eat while holding a cocktail or possibly a glass of champagne.
