Ingredients

  • 2 1/2 lb chicken breasts, cut into 1 1/2in strips
  •     water
  •     salt
  •     celery tops
  • 3 Tbsp. margarine
  • 1 x tart apple, peeled and diced
  • 1 x onion, thinly sliced
  • 1 Tbsp. curry pwdr
  • 1/3 c. raisins
  • 1 c. chicken broth
  • 1/2 c. Coca-Cola
  • 3 1/2 Tbsp. flour
  • 1 c. evaporated lowfat milk
  • 1 tsp salt
  • 1/4 tsp pepper
  • 8 x servings rice cooked to package directions

Directions

  1. Cook chicken and a few celery tops in a large pot of boiling salted water. Cover, reduce heat to simmer and cook 45 min. In a large skillet, heat the margarine and add in apple, onion, and curry pwdr. Saute/fry for 5 min. Stir in raisins, chicken broth, and Coke. In a medium pot, mix flour with cream. Stir till smooth. Add in salt, pepper, and apple/onion mix. Cook over low heat till thick and creamy. Add in rained cooked chicken. Cold and pour into gallon double zip-lock. Store in cooler overnight. Reheat slowly and serve over cooked rice.
