Ingredients

  • 1 doz warm chilies
  • 2 c. White vinegar
  • 3/4 c. Sugar
  • 1/2 Tbsp. Pickling salt
  • 1/2 Tbsp. Mustard seeds
  • 1/2 Tbsp. Celery seeds
  • 8 x Tortillas cut into quarters
  • 1 c. Vegetable oil, for frying
  • 1/2 c. Yellow cheddar cheese
  • 1/2 c. Jalapeno jack cheese
  • 1 pt Cherry tomato, quarters
  • 1 c. Chili con carne

Directions

  1. Bring to a boil. Reduce heat and let simmer for 15 min.
  2. NACHOS:In an ovenproof dish, layer chips, cheese, tomatoes, chili con carne.
  3. Broil about 4 min or possibly till cheese is melted.
  4. Serve with lowfat sour cream, salsa, and minced onions (optional).
