My Own Sweet Potato Pie Recipe

Ingredients

  • 2 large eggs
  • 1 pt. canned sweet potatoes
  • 3/4 c. sugar
  • 1/2 c. salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon grnd cloves
  • 1/4 teaspoon allspice
  • 1 1/2 c. cream (or possibly 12 ounce can evaporated lowfat milk)
  • 1 (9") deep dish pie crust, unbaked

Directions

  1. Preheat oven to 425 degrees.In blender, put first 9 ingredients. Put blender cap on and hold down. Blend till smooth. Pour into pie crust and bake for 15 min. Reduce heat to 350 degrees and bake for about 45 min longer (or possibly till knife inserted near center comes out clean).
  2. NOTE: I like to can sweet potatoes when they are plentiful and in season. The canned potatoes are so easy to make into pies.
