  • 1/4 c. chicken stock
  •     (or possibly canned chicken broth)
  • 1 tsp sesame oil
  • 1/4 tsp salt
  • 1/8 tsp freshly-grnd white pepper
  • 1 Tbsp. vegetable oil
  • 2 x garlic cloves chopped
  • 1 c. minced roasted duck
  • 1/2 c. finely-minced carrot
  • 3 x fresh shiitake mushrooms stems removed,
  •     and caps minced finely
  • 1/2 c. finely-minced celery
  • 1/4 c. minced green onion, white part only
  • 1/4 c. finely-minced water chestnuts
  • 1 tsp cornstarch dissolved in
  • 2 tsp water
  • 8 x Mandarin pancakes heated
  •     (or possibly 8 small flour tortillas)
  • 1/3 c. Hoisin sauce

Directions

  1. Stir the stock, sesame oil, salt and pepper together in a small bowl till blended.
  2. For the Duck Wraps: Heat a wok over high heat till warm. Add in the oil and swirl to coat the sides. Add in the garlic and stir-fry till fragrant, about 20 seconds. Add in the duck, carrot, mushrooms, celery, green onions and water chestnuts and stir-fry till the carrot is tender, 1 1/2 to 2 min. Pour in the seasoning, cook for 1 minute then add in the dissolved cornstarch and cook, stirring, till mix thickens; about 30 seconds.
  3. Scoop onto a serving platter. Place the Mandarin pancakes and a small bowl of hoisin sauce alongside. To eat, spread a small amount of the hoisin sauce and about 3 Tbsp. of the duck mix on the pancake. Wrap like a burrito and eat out of hand.
  4. This recipe yields 4 servings.
