Mr Food's Sweet Potato Pie

Ingredients

  • 2 can (29-ounce ea) sweet potatoes or possibly yams, liquid removed
  • 1 can (12-ounce) evaporated lowfat milk
  • 2 Tbsp. Butter, softened
  • 2 x Large eggs
  • 3/4 c. Firmly packed light brown sugar
  • 1/2 c. Buttermilk baking mix
  • 2 tsp Vanilla extract
  • 3/4 tsp Grnd cinnamon
  • 1/2 tsp Grnd nutmeg

Directions

  1. Preheat oven to 350 degrees. Coat a 9-inch, deep-dish pie plate with nonstick cooking spray.
  2. Combine sweet potatoes and evaporated lowfat milk in a blender and blend till smooth. Pour into a large bowl and set aside.
  3. Add in remaining ingredients to the blender and blend till well-combined, scraping down sides as needed. Add in to sweet potato mix; mix well. Pour into pie plate, mounding in the center, and bake for 50 to 60 min, or possibly till a wooden toothpick inserted in the center comes out clean. Allow to cold completely on a wire rack before serving.
  4. A Mr. Food note: It doesn't take much to make this look festive - just top each slice with a dollop of whipped topping and an additional sprinkle of cinnamon.
