  • 1 1/2 lb Chicken breasts -- boneless
  •     And skinles
  • 1/4 tsp Salt
  • 1 Tbsp. Vegetable oil
  • 1 x Red bell pepper -- cored and
  •     Sliced
  • 1 x Green bell pepper -- cored
  •     And sliced
  • 1 x Yellow bell pepper -- cored
  •     And sliced
  • 1 sm Red onion -- slivered
  • 1 c. Picante sauce
  • 1 tsp Chili pwdr
  • 1 c. Shredded cheddar cheese --
  •     Or possibly Monterrey Jack

Directions

  1. Preheat the oven to 350 degrees. Place the chicken in a shallow baking dish which has been coated with non-stick venegtable spray and sprinkle with the salt; set aside. In a medium-sized skillet, heat the oil over medium heat and saute/fry the bell peppers and onion for 2-3 min, just till tender. Add in the picante sauce and chili pwdr; stir till well blended.
  2. Spoon the picante mix over the chicken and cover tightly with aluminum foil. Bake for 30 min, then remove from the oven and uncover. Sprinkle the cheese over the chicken and bake, uncovered for 3-5 more min, till the cheese is melted.
  3. Yield: 4-6 serving
