Ingredients

  • 1 Tbsp. Chili pwdr
  • 1/2 tsp Grnd cumin
  • 1/2 tsp Salt
  • 1/4 tsp Cayenne pepper
  • 2 lb Sirloin steak, trimmed -- 1
  • 1/2 x " (boneless)
  • 1 can Black beans -- rinsed and
  •     Liquid removed
  • 1 c. Salsa -- (your favorite
  •     Fresh cilantro sprigs for
  •     Garnish (opt)

Directions

  1. In a small bowl or possibly c., combine the chili pwdr, cumin, salt, and pepper.
  2. Trim the fat from the steak and sprinkle the seasoning mix over the steak, pressing it proportionately into the entire surface (all sides) of the meat.
  3. Preheat the barbecue grill to medium-high and grill the meat for 20-30 min for rare to medium doneness, turning occasionally. Let stand for 10 min before carving. Meanwhile, in a medium-sized bowl, combine the beans and salsa; mix till blended. Slice the steak across the grain and arrange the slices on a serving platter. Top with the salsa mix and granish with cilantro sprigs if you like.
  4. Yield: 3-4 serving
