Ingredients

  • 5 c. All-purpose flour
  • 1 1/4 c. Instant dry lowfat milk -- nonfat
  • 1/3 c. Sugar
  • 2 Tbsp. Baking pwdr
  • 1/2 tsp Grnd cinnamon
  • 1 Tbsp. Salt
  •     For pancakes, to 1 1/2 c.
  • 1 x Egg
  • 1 c. Water
  • 3 Tbsp. Vegetable oil

Directions

  1. Combine all mix ingredients in a large bowl; mix well. Place in a large airtight container and store in a cold dry place. Use within 6-8 months.
  2. Yield: 7 c. mix
  3. To make a few batches of Homemade Cinnamon Pancakes:
  4. Place the pancake fold in a medium-sized bowl. In a small bowl, combine the egg, water, and oil. Add in to the pancake mix and blend well, blending in more water if thinner pancakes are desired. Let stand for 5 min. Cook pancakes on a warm griddle or possibly in a large skiller (which has been coated with non stick vegetable spray) for 3-4 min, or possibly till browned on both sides.
  5. Yield: 10-12 4-inch pancakes
