Directions

  1. Brown the onions in the butter, add in grnd beef and fry. Fold in seasoning and tomatoes that have been cut up, then add in wine. Cover and allow to simmer till liquid is absorbed. Slice eggplant and fry slices in butter till brown.
  2. Grease a baking dish with butter and sprinkle the bottom with crumbs. Set a layer of the cooked eggplant slices on the bottom. Beat the whites of 2 Large eggs and fold in with the beef that has been transferred to a mixing bowl. Add in 3 Tbsp. of crumbs and mix well.
  3. Place some of the beef mix over the layer of eggplant, cover with more eggplant and more beef alternately till the baking dish is filled, topping with eggplant.
  4. Make cream sauce and pour over top. Bake at 375 degrees for about 1 hour. Serves 8.
