Ingredients
- 2 med. onions, minced
- 1/4 c. extra virgin olive oil
- 1 pound grnd beef
- 8 ounce. tomato sauce
- 2 teaspoon cinnamon
- 1 teaspoon salt
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 pound cottage fries, unthawed
- Parmesan cheese
- 2 beaten Large eggs
- 1 c. lowfat milk
Directions
- Saute/fry onions in extra virgin olive oil till soft. Add in grnd beef and saute/fry till redness disappears. Add in next 5 ingredients (tomato sauce through cumin) and stir well. Place mix in greased casserole in 2 layers, topping each layer with 1/2 lb. cottage fries. Sprinkle with Parmesan cheese. Mix lowfat milk and Large eggs and pour over top. Bake 45 min at 350 degrees. Serves 4.
