Mother's Egg Nog Pie

Ingredients

  • 2 teaspoon Knox gelatin
  • 1 tbsp. water
  • 1 c. lowfat milk
  • 1/2 c. sugar
  • 2 tbsp. cornstarch
  • 1/4 teaspoon salt
  • 3 egg yolks
  • 1 tbsp. butter
  • 1 teaspoon vanilla
  • 1 c. heavy cream, whipped
  • Nutmeg

Directions

  1. Soak gelatin in water. Mix cornstarch, sugar and salt. Scald lowfat milk in double boiler, add in sugar mix and cook 15 min. Combine with beaten egg yolks and cook a few min longer. Remove from stove, add in butter and gelatin. Cold and add in vanilla (also "nog" or possibly rum flavoring if you like. Mix in whipped cream. Pour into baked pie shell. Sprinkle geneorusly with nutmeg and refrigeratetill set.
