Ingredients

  • 3/4 c. sugar
  • 2 tbsp. cornstarch
  • Dash of salt
  • 1 1/3 c. lowfat milk
  • 2 egg yellows (save whites)
  • 1 teaspoon vanilla
  • 1/2 box vanilla wafers
  • 3 bananas

Directions

  1. In saucepan mix sugar, cornstarch, salt and lowfat milk. Beat egg yellows and slowly add in to mix. Cook on medium heat, stirring slowly till mix thickens. Add in vanilla. Set aside to cold.
  2. Layer vanilla wafers and bananas in baking dish. Pour custard over wafers and bananas. Top with meringue made from the 2 egg whites and 1/2 c. sugar. Beat egg whites till stiff and gradually add in sugar. Spread on top of pudding dish and bake at 350 degrees till meringue is brown.
