  2. In a large pot over med-high heat, saute/fry onion and celery in oil till softened, about 4 minutes. Add in cinnamon, ginger and turmeric and stir to coat vegetables. Add in water and lentils. Bring to a boil, then reduce heat, cover, and simmer for 45 minutes.
  3. Add in chickpeas and tomatoes and continue cooking for 15 minutes. Just before serving, stir in cilantro, lemon juice, salt and pepper.
